钱钟书:『 吃 饭 』 吃饭有时很像结婚,名义上最主要的东西,其实往往是附属品。吃讲究的饭事实上只是吃菜,正如讨阔佬的小姐,宗旨倒并不在女人。这种主权旁移,包含着一个转了弯的、不甚朴素的人生观。辩味而不是充饥,变成了我们吃饭的目的。舌头代替了肠胃,作为最后或最高的裁判。不过,我们仍然把享受掩饰为需要,不说吃菜,只说吃饭,好比我们研究哲学或艺术,总说为了真和美可以利用一样。有用的东西只能给人利用,所以存在;偏是无用的东西会利用人,替它遮盖和辩护,也能免于抛弃。柏拉图在《理想国》里把国家分成三等人,相当于灵魂的三个成份;饥渴吃喝是灵魂里最低贱的成份,等于政治组织里的平民或民众。最巧妙的政治家知道怎样来敷衍民众,把自己的野心装点成民众的意志和福利;请客上馆子去吃菜,还顶着吃饭的名义,这正是舌头对肚子的籍口,彷佛说:“你别抱怨,这有你的份!你享着名,我替你出力去干,还亏了你什么?”其实呢,天知道——更有饿瘪的肚子知道——若专为充肠填腹起见,树皮草根跟鸡鸭鱼肉差不了多少!真想不到,在区区消化排泄的生理过程里还需要那么多的政治作用。 古罗马诗人波西蔼斯(Persius)曾慨叹说,肚子发展了人的天才,传授人以技术(Magister artising enique largitor venter)。这个意思经拉柏莱发挥得淋漓尽致,《巨人世家》卷三有赞美肚子的一章,尊为人类的真主宰、各种学问和职业的创始和提倡者,鸟飞,兽走,鱼游,虫爬,以及一切有生之类的一切活动,也都是为了肠胃。人类所有的创造和活动(包括写文章在内),不仅表示头脑的充实,并且证明肠胃的空虚。饱满的肚子最没用,那时候的头脑,迷迷糊糊,只配作痴梦;咱们有一条不成文的法律:吃了午饭睡中觉,就是有力的证据。我们通常把饥饿看得太低了,只说它产生了乞丐,盗贼,娼妓一类的东西,忘记了它也启发过思想、技巧,还有“有饭大家吃”的政治和经济理论。德国古诗人白洛柯斯(B.H.Brockes)做赞美诗,把上帝比作“一个伟大的厨师傅(dergross Speisemeister)”,做饭给全人类吃,还不免带些宗教的稚气。弄饭给我们吃的人,决不是我们真正的主人翁。这样的上帝,不做也罢。只有为他弄了饭来给他吃的人,才支配着我们的行动。譬如一家之主,并不是挣钱养家的父亲,倒是那些乳臭未干、安坐着吃饭的孩子;这一点,当然做孩子时不会悟到,而父亲们也决不甘承认的。拉柏莱的话似乎较有道理。试想,肚子一天到晚要我们把茶饭来向它祭献,它还不是上帝是什么?但是它毕竟是个下流不上台面的东西,一味容纳吸收,不懂得享受和欣赏。人生就因此复杂了起来。一方面是有了肠胃而要饭去充实的人,另一方面是有饭而要胃口来吃的人。第一种人生观可以说是吃饭的;第二种不妨唤作吃菜的。第一种人工作、生产、创造,来换饭吃。第二种人利用第一种人活动的结果,来健脾开胃,帮助吃饭而增进食量。所以吃饭时要有音乐,还不够,就有“佳人”、“丽人”之类来劝酒;文雅点就开什么销寒会、销夏会,在席上传观法书名画;甚至赏花游山,把自然名胜来下饭。吃的菜不用说尽量讲究。有这样优裕的物质环境,舌头像身体一般,本来是极随便的,此时也会有贞操和气节了;许多从前惯吃的东西,现在吃了彷佛玷污清白,决不肯再进口。精细到这种田地,似乎应当少吃,实则反而多吃。假使让肚子作主,吃饱就完事,还不失分寸。舌头拣精拣肥,贪嘴不顾性命,结果是肚子倒霉受累,只好忌嘴,舌头也只能像李逵所说“淡出鸟来”。这诚然是它馋得忘了本的报应!如此看来,吃菜的人生观似乎欠妥。
