He was the only passenger in the coach,when another man came in (carrying) a gun and said to him…为什么是加ing而不是过去时呢？补出来不是应该是when another man came in who carried a gun …吗？

因为从句中Came已经作了谓语，所以这里的现在分词Carrying用作非谓语状态，来作man的定语。 而你补出来的句子是又用了一个定语从句修饰man，可以重新用一个谓语。

:没有，用法不一样而已。定语从句自然可以修饰名词，但非谓语状态同样可以作定语修饰名词。
