In my classic Mac Pro I had a PCIe card with flash memory as SSD, an Atto PCIe card for SATA 6 Gbit/s ports for more (bootable) SSDs, and on the video card there was an Arctic.ac cooler (which was very quiet but used the space of 3 slots). So basically it was full of PCIe cards to make up for stuff it was missing on-board, and had no space for yet another card. In my case I was still missing USB3; for Thunderbolt I had/have no devices for (though wouldn't have minded a faster DAS). Plus the Mac Pros fans were becoming louder and louder. It still does have some life left, but not at my place.
In conclusion, yes the classic Mac Pro are versatile beasts, and I also miss them. I'd rather have continued using a (Haswell or Ivy Bridge-E based) real Mac than building/maintaining a Hackintosh, but as Apple no longer offers a Mac with PCIe slots, it is/was just a matter of time. The new Mac Pro is a nice machine for its target audience, but I like to replace the video card every year or so, so it was a no go.
